Licorice (Glycyrrhize glabra L.) is a common medicinal food - licorice extract is widely used as a natural sweetener in confectionery and canned foods. The sweetness of liquorice comes from Glycyrrhizic acid and Glycyrrhetinic acid. The former is a class of triterpenoid saponins, accounting for about 4% to 5% of the dry weight of licorice root, the sweetness is 50 times that of sucrose - Glycyrrhizic acid is formed by the hydrolysis of glycyrrhizic acid to remove the chain of glycolic acid, the sweetness is 250 times that of sucrose.
