Gardenia Blue is natural blue colorant,it's extracted from the Gardenia fruit ( Gardenia jasminoides Ellis )which mainly contain of crocin and crocetin,it's good water soluble.it is inherent fragrance,strong color,light and heat good resistance at PH 4.0-6.0,It's widely used in food colorant.

Soluble in water, insoluble in more than 30% of ethanol, ether, and petroleum ether and other organic solvents. The maximum absorption wavelength in aqueous solution is 590nm. Good heat and light resistance, stable to metal ions. Tinting strength is strong. The stability is much better than chlorophyll. Blue is stable at Ph 4 ~ 8, reversible condensation occurs at Ph 3, and bluish purple is stable at Ph 9. No adverse reactions were observed in toxicological tests. The oral LD5016.7g/kg of rats was obtained, and ADI did not require special provisions.
Gardenia blue is mainly used for coloring hard candy, pectin, agar-agar, pudding, Massimaro sugar, cookies, muffin, cake prefab powder, cream, ice cream, dairy products, vegetables, green beans and other canned, beverage, fruit juice, etc., as a blue coloring agent.
