They control the activation and catabolism of proteins by inhibiting serine proteases in the body. There are four common sources of natural trypsin inhibitors: bovine pancreas, ovomucoid, soybeans, and lima beans. They bind to serine proteases in the form of competitive substrate analogs to form inactive complexes, thereby rendering the protease inactive.
