Calcium glycerophosphate is a white or slightly yellow crystalline powder, odorless, almost odorless, and slightly bitter. Slightly hygroscopic in the air. It loses crystal water at 130ºC to form anhydrous substance and decomposes above 170ºC. Each g is dissolved in about 50ml of 25ºC water. It is more soluble in water when the temperature is lower, and the aqueous solution is alkaline. Insoluble in ethanol, soluble in glycerin. Citric acid or lactic acid can improve its solubility in water, but it is easy to decompose when heated. It is often used as a calcium fortifier for food, such as bread, flour, noodles, soy milk, etc.
