Sodium ascorbate is an organic substance with the chemical formula C6H7O6Na. It is a white to slightly yellowish white crystalline powder or granule, odorless and slightly salty in taste. The decomposition temperature is 218°C. It is relatively stable in a dry state. The color deepens when exposed to light. It absorbs moisture and slowly oxidizes and decomposes in aqueous solution.
