Phytic acid, also known as inositol hexaphosphate, referred to as IP6, is the form of phosphorus stored in plants. Plant-source foods such as cereals, beans, and nuts contain high amounts of phytic acid. Phytic acid generally exists in the form of phytates such as calcium and magnesium phytate (phytin), which chelates calcium and magnesium. The concentration is highest in the outer husks of cereals such as rice bran, and in beans it is mainly found in the cotyledons, or watercress.
